Soft Butter Cookies with Sugar Frosting

Soft Butter Cookies with Sugar Frosting


  • For Cookie:
  • - 1 cup (2 sticks) of unsalted butter, at room temperature or softened in the microwave
  • - 3⁄4 cups of granulated sugar
  • - 1 egg, room temperature
  • - 1⁄2 tea spoon of vanilla extract
  • - 21⁄2 cups of all purpose white flour
  • - 1 tea spoon of baking powder
  • - 1⁄4 tea spoon of sea salt salt
  • For Frosting:
  • - 1⁄2 cup (1 stick) of unsalted butter, softened
  • - 21/2 cups of powdered sugar
  • - 1 tea spoon of real vanilla extract
  • - milk (optional)
  • - Your choice of food coloring (optional)


  1. Preheat oven to 375 F.
  2. In the mixing bowl of an electric mixer, cream together butter and sugar, at medium speed, with the paddle-like beater attachment.
  3. Reduce mixer speed to low, add egg and vanilla, and continue to mix until content seems even. Turn mixer off for a second.
  4. In a separate mixing bowl, add flour, baking powder and salt, and mix together with a spoon.
  5. Turn electric mixer on at medium speed, add flour to creamed mixture 1/4 bowl at a time, and mix well. Content should have the consistency of cookie dough at this point.
  6. On a clean counter top, sprinkle a few pinches of flour for rolling. Take dough out of mixing bowl onto counter top and knead for 30 seconds.
  7. Break off a handful of dough; place the rest back in the bowl; and roll it out with a rolling pin until dough is at about 11/2 inches thick.
  8. Using cookie cutters or cookie press of your choice, cut cookies from dough, and place on baking sheet.
  9. Bake for 8 - 10 minutes, depending on your desired softness.
  10. Let cool for a few minutes.
  11. While cookies are cooling, make frosting by mixing together butter, vanilla and 2 cups of powdered sugar with a hand-held electric mixer at medium to high speed.
  12. Continue to mix, and slowly add remainder of the powdered sugar in.
  13. If texture becomes too tough, add tiny drops of milk to make frosting softer -- BUT NOT TOO MUCH! Use 1/2 table spoons at a time.
  14. When frosting has reached desired texture, reduce mixer speed to low and add a few drops of food coloring.
  15. Continue to mix until color's even; turn electric beater off.
  16. When cookies have completely cooled from baking, frost each one with a spatula.
  17. Enjoy!
